Greetings December CSA Share Community,
Thank you for purchasing a December box from our farm. We appreciate your support. We have many folks participating in this share that were not part of our 2021 CSA membership, as well as many return members – we welcome you all. We will likely offer once a month boxes (in addition to our once/week CSA program) in 2022 as the response has been so favorable. We are currently accepting new members for the 2022 season, and offering an 18% discount for members who sign up before January 01, 2022. Details are at our website www.countryvalleyfarm.com – feel free to reach out with Adam if you have any questions at all.
It is our intention to provide healthy, great tasting, locally grown, certified organic produce to our community at a fair and reasonable price. We hope that you enjoy the produce. Our CSA boxes contain items that most folks are familiar with, as well as some lesser known or less popular items. Variety is a key component of a healthy diet. We encourage all to experiment and try new things or new ways of preparing old favorites. Some folks prefer to share some of their items with neighbors, friends, and family; we love that too.
Shares will all be delivered this Saturday. Delivery times were sent on text. Please have payment ready at the time of delivery, as cash or check. If you have a change in plans and won’t be home when your farm share is being delivered, please text Adam at (831) 706-1237. We have an ambitious delivery route and schedule set, and are expecting some snow along the way. I am looking forward to seeing everybody.
Below is a list of items that each box contains. We had a few folks ask for substitutions, your box will be packed accordingly. We also like to include a few preparation tips as well. We recommend washing all produce. One tip for washing root vegetables is to put them in a bowl and add a drop of castile soap or natural dish soap with luke-warm water; let them soak for a few minutes and then drain and wash again. We don’t wash root vegetables in advance this time of year, as leaving the native soil on them improves the storage life considerably. All of the produce is portioned in plastic bags. It can stay in those bags if being stored in the refrigerator, and all of the items can go into your refrigerator to get the longest shelf life. Anything being stored at room temperature should be removed from the bags so it is has airflow.
1. 1 package pea shoots from Gardenworks – Great raw on salads, sandwiches, as an entrée topper, also nice when lightly sauteed for just a moment.
2. 1 green cabbage from Cinzori Farm – A cabbage stir fry topped with pea shoots is an easy and versatile recipe.
3. 1 red cabbage from Cinzori Farm – We’ve been making slaws with red cabbage, it is also nice added to a lettuce salad for color, texture, and add nutrition. Also great in a soup.
4. 1 savoy cabbage from Cinzori Farm – A favorite as the leaves are ruffly and have a sweeter flavor than regular cabbage. Great raw or cooked.
5. 2 acorn squash from Cinzori Farm – Perfect for making stuffed squash. Simply wash, cut in half, remove the seeds, wash them, dry in a colander for a bit, and roast on a cookie sheet while you are baking the squash.
6. 2 butternut squash from Cinzori Farm – Great baked or cubed, or as a pie. Simply wash, cut in half, remove the seeds, wash them, dry in a colander for a bit, and roast on a cookie sheet while you are baking the squash.
7. 2 green kabocha squash from Cinzori Farm – Well loved in Japanese cuisine, it is similar to the American buttercup but a bit denser and sweeter. Excellent for soup or pie. Simply wash, cut in half, remove the seeds, wash them, dry in a colander for a bit, and roast on a cookie sheet while you are baking the squash.
8. 2 pounds red onions from Cinzori Farm – We love them in salads but they also add a twist to cooked dishes.
9. 2 pounds yellow onions from Cinzori Farm – These have a good balance of sweetness and sharpness to the flavor and are the perfect size.
10. 2 pounds of russet potatoes from Cinzori Farm – AKA Idaho potatoes, russets are famous as a baked potato, or for French fries and potato chips. They can be cooked any way of course.
11. 2 pounds of huckleberry gold potatoes from Cinzori Farm – Purple on the outside and deep yellow on the inside. These have a very buttery taste.
12. 2 pounds of blue potatoes from Cinzori Farm – Blue on the outside and inside, a slightly sweeter potato. Add some extra color to your standard potato dishes for a delightful visual presentation.
13. 6 large cloves of garlic from our farm – A trusted hardneck garlic with very large cloves, few cloves per bulb, and reliable garlic flavor.
14. 2 pounds of black Spanish radishes from our farm – These are best cooked in a soup, stew, or roasted. You can also slice them very thin, soak overnight in vinegar of choice, and have an amazing sandwich condiment or charcuterie board component.
15. 2 pounds of daikon from our farm – Also well loved in Japanse cuisine, great raw, cooked, pickled, you name it. When you shred them and add to a salad the flavor gets much milder. Perfect in a stir fry or in a soup also.
16. 2 pounds of turnips from our farm – The quintessential tangy flavor root, turnips are very versatile. You can peel them and eat raw or cooked, or leave the peels on. We’ve been roasting turnips, daikon, black radish, and cubed squash on sheet pans with a generous amount of olive or coconut oil, a touch of salt and pepper, and then drizzling with maple syrup just before they are done cooking. If you are shy with root veggies, this recipe may be a breakthrough for you.
Warm Regards,
